Deliciously chewy breakfast cookies made with simple, wholesome ingredients, perfect for a healthy start to your day.

Ingredients

  • 1 cup oats
  • 1 ripe banana
  • 1/4 cup almond butter
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mash the ripe banana in a mixing bowl until smooth.
  3. Add the oats, almond butter, honey or maple syrup, vanilla extract, baking powder, and salt to the mashed banana. Mix until well combined.
  4. Fold in the chocolate chips if desired.
  5. Scoop dollops of the mixture onto a parchment-lined baking sheet, flatten slightly.
  6. Bake for 10-12 minutes until golden brown.
  7. Allow to cool for a few minutes before transferring to a wire rack.

Notes

Can pair with yogurt or fruit for a balanced breakfast. Store in an airtight container for up to 3 days or freeze for up to 3 months.
