A quick and delicious pasta dish with a spicy kick from chipotle peppers, perfect for a weeknight meal.

  • 8 ounces pasta (your choice)
  • 1 pound chicken breast, diced
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 can (15 ounces) diced tomatoes
  • 1 can (7 ounces) chipotle peppers in adobo sauce (to taste)
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • Parmesan cheese for serving

Instructions

  1. Cook the pasta according to package instructions; drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add the diced chicken and cook until browned and cooked through.
  3. Add the chopped onion and garlic to the skillet, sautéing until softened.
  4. Stir in the diced tomatoes and chipotle peppers (chopped) and cook for 2-3 minutes.
  5. Add the heavy cream and stir until combined. Bring to a simmer and season with salt and pepper.
  6. Toss the cooked pasta in the skillet with the sauce until well coated.
  7. Serve hot, garnished with fresh cilantro and grated Parmesan cheese.

Notes

Adjust the level of spiciness by adding more or fewer chipotle peppers. You can also add extra veggies like bell peppers or zucchini.
