A simple yet satisfying dish featuring egg noodles and vibrant greens, perfect for a comforting meal.

Ingredients

  • 8 oz egg noodles
  • 2 tablespoons butter
  • 2 cups mixed greens (such as spinach, kale, or Swiss chard)
  • Salt and pepper to taste
  • Parmesan cheese (optional)

Instructions

  1. Cook the egg noodles according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, melt the butter over medium heat.
  3. Add the mixed greens to the skillet and sauté until wilted, about 3-5 minutes.
  4. Add the cooked noodles to the skillet and toss to combine with the greens.
  5. Season with salt and pepper to taste.
  6. Serve hot, optionally topped with freshly grated Parmesan cheese.

Notes
