A creamy and refreshing cheesecake infused with mint chocolate, perfect for celebrating special moments or indulging in a sweet escape.

Ingredients

  • 200g digestive biscuits
  • 100g unsalted butter, melted
  • 300g cream cheese
  • 100g icing sugar
  • 200ml double cream
  • 1 tsp vanilla extract
  • 100g Aero chocolate (mint flavor), chopped
  • Mint leaves for garnish

Instructions

  1. Prepare the Biscuit Base: Crush the digestive biscuits into fine crumbs and mix with melted butter. Press the mixture into the base of a springform pan and chill in the fridge.
  2. Beat the Cream Cheese: In a mixing bowl, beat the cream cheese and icing sugar until smooth.
  3. Whip the Double Cream: Whip the double cream and vanilla extract until soft peaks form.
  4. Combine the Mixtures: Gently fold the whipped cream into the cream cheese mixture.
  5. Add the Chocolate: Add the chopped Aero chocolate and fold until evenly distributed.
  6. Assemble the Cheesecake: Pour the cheesecake mixture over the biscuit base and smooth the top.
  7. Chill to Set: Chill for at least 4 hours or until fully set.
  8. Garnish and Serve: Serve garnished with mint leaves and, if desired, extra Aero chocolate.

Notes

Ensure the cream cheese is at room temperature for easy mixing. For clean slices, use a hot knife.
