  • 1 cup granulated sugar
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3 large eggs
  • 1/2 cup vegetable oil
  • 1/2 cup buttermilk
  • 1 tablespoon red food coloring
  • 1 teaspoon vanilla extract
  • 1 cup cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract (for filling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a jelly roll pan with parchment paper.
  2. In a bowl, mix together the flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In a separate bowl, whisk together the eggs, vegetable oil, buttermilk, red food coloring, and vanilla.
  4. Gradually add the wet ingredients to the dry ingredients and mix until smooth.
  5. Pour the batter into the prepared pan and spread it evenly.
  6. Bake for 15-20 minutes or until a toothpick comes out clean.
  7. Let it cool slightly, then invert onto a towel dusted with powdered sugar.
  8. Roll the cake tightly in the towel and let it cool completely.
  9. Prepare the filling by mixing the cream cheese, powdered sugar, and vanilla until smooth.
  10. Unroll the cooled cake, spread the filling evenly, and re-roll the cake. Refrigerate before serving.
