  • 1 box chocolate cake mix
  • 1 cup water
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 cup Andes mints, chopped
  • 1 cup mint chocolate chips
  • 1 cup heavy cream
  • 1 tablespoon powdered sugar
  • Mint leaves for garnish

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Mix together the chocolate cake mix, water, vegetable oil, and eggs until smooth.
  3. Fold in the chopped Andes mints and mint chocolate chips.
  4. Divide the batter evenly between the prepared cake pans.
  5. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  6. Let the cakes cool in the pans for 10 minutes, then turn them out onto wire racks to cool completely.
  7. Whip the heavy cream and powdered sugar together until soft peaks form.
  8. Spread whipped cream between the layers and on top of the cake once cooled.
  9. Garnish with mint leaves and additional chopped Andes mints if desired.
