Delicate crepes filled with warm, spiced apple mixture, perfect for breakfast or brunch.

Ingredients

  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 1/4 cups milk
  • 1 tbsp sugar
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 2 tbsp melted butter
  • 2 apples, peeled and diced
  • 1 tsp cinnamon
  • 2 tbsp brown sugar
  • 1 tbsp lemon juice

Instructions

  1. Whisk together the flour, eggs, milk, sugar, vanilla, salt, and melted butter until smooth. Let the batter rest for 30 minutes.
  2. Sauté the diced apples with cinnamon, brown sugar, and lemon juice until softened.
  3. Heat a non-stick pan over medium heat; pour 1/4 cup of batter, swirling to coat the bottom. Cook for 1-2 minutes, flip and cook for another minute. Repeat with the remaining batter.
  4. Fill each crepe with the warm apple mixture, folding or rolling them gently. Serve warm.

Notes

Serve with whipped cream, vanilla ice cream, or drizzle with maple syrup for extra goodness.
