Delightful crumbly bars with a buttery base and a fruity apricot layer, evoking warm memories of family and love.

Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 cup apricot preserves
  • 1/2 cup sliced almonds (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  2. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Mix in the vanilla extract.
  4. Gradually add in the flour and salt, mixing until just combined.
  5. Press half of the mixture into the bottom of the prepared baking pan.
  6. Spread the apricot preserves evenly over the crust, and sprinkle almonds if using.
  7. Crumble the remaining mixture atop the apricot layer.
  8. Bake in the preheated oven for 30-35 minutes until the top is golden brown.
  9. Allow to cool completely before slicing into bars.

Notes

For even more flavor, toast the sliced almonds before sprinkling them on top. Make sure the butter is at room temperature for best results.
