A refreshing pie with bright citrus flavors and a crunchy saltine crust, reminiscent of summer days by the beach.

Ingredients

  • 1 1/2 cups crushed saltine crackers
  • 1/2 cup unsalted butter, melted
  • 1/2 cup granulated sugar
  • 1 can (14 oz) sweetened condensed milk
  • 1/2 cup fresh lemon juice
  • 1/4 cup fresh lime juice
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • Zest of 1 lemon
  • Zest of 1 lime

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine crushed saltines, melted butter, and granulated sugar, then press firmly into a pie plate. Bake for 10 minutes and cool to room temperature.
  3. Whisk together sweetened condensed milk, lemon juice, and lime juice in another bowl until smooth. Pour into the cooled crust.
  4. Bake for an additional 10 minutes, then allow cooling to room temperature.
  5. Whip heavy cream with powdered sugar until soft peaks form.
  6. Spread whipped cream over the cooled pie and sprinkle with lemon and lime zest.
  7. Chill in the refrigerator for at least 2 hours before serving.

Notes

For best results, use fresh citrus juice and chill your equipment when whipping cream to achieve airy peaks.
