2 large sweet potatoes
1 pound ground turkey
1 can (15 oz) black beans, drained and rinsed
1 can (15 oz) diced tomatoes
1 avocado, diced
1 onion, diced
2 cloves garlic, minced
1 tablespoon chili powder
1 teaspoon cumin
Salt and pepper to taste
Olive oil
Fresh cilantro for garnish
Instructions
Preheat the oven to 400°F (200°C). Wash the sweet potatoes and pierce them with a fork. Place them on a baking sheet and bake for about 45 minutes or until tender.
Add the ground turkey to the skillet and cook until browned. Stir in the black beans, diced tomatoes, chili powder, cumin, salt, and pepper. Let it simmer for about 10 minutes.
Remove the sweet potatoes from the oven and let them cool slightly. Slice them open and fluff the insides with a fork.
Spoon the turkey chili mixture into the sweet potatoes.
Top with diced avocado and garnish with fresh cilantro before serving.
