A flavorful twist on classic breakfast, these Baked Breakfast Tacos are stuffed with fluffy eggs, savory bacon or sausage, and melted cheese, making them a family favorite.

  • 8 small tortillas
  • 6 large eggs
  • 1 cup cooked and crumbled bacon or sausage
  • 1 cup shredded cheese
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onions
  • Salt and pepper to taste
  • Sour cream and salsa for serving (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) so it’s ready to bake.
  2. Whisk together the eggs, adding salt and pepper to taste.
  3. Stir in the cooked bacon or sausage, shredded cheese, diced bell peppers, and diced onions.
  4. Place the tortillas in a baking dish, pressing them down to create pockets.
  5. Carefully fill each tortilla with the egg mixture. Bake for 20-25 minutes, until the eggs are set and slightly golden.
  6. Serve warm, garnished with sour cream and salsa if desired.

Notes

These tacos can be stored in an airtight container in the fridge for up to three days. For best results, reheat them in the oven or air fryer.
