  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries
  • 1 tablespoon lemon zest (optional)

Instructions

  1. Preheat the oven to 425°F (220°C) and line a muffin tin with paper liners.
  2. Mix the flour, granulated sugar, brown sugar, baking powder, and salt together in a large bowl.
  3. Whisk together the melted butter, milk, eggs, and vanilla extract until well combined in another bowl.
  4. Pour the wet ingredients into the dry ingredients and gently mix until just combined. Be careful not to overmix.
  5. Fold in the blueberries and lemon zest if using.
  6. Divide the batter evenly among the muffin cups, filling them about 3/4 full.
  7. Bake for 5 minutes at 425°F, then lower the temperature to 350°F (175°C) and bake for an additional 15-20 minutes until golden and a toothpick inserted in the center comes out clean.
  8. Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Notes

Use fresh blueberries for the best flavor. Avoid overmixing the batter.
