  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1 1/2 cups fresh blueberries
  • 1/2 cup brown sugar
  • 1/2 cup rolled oats
  • 1/4 cup all-purpose flour
  • 1 teaspoon cinnamon

Instructions

  1. Preheat the oven to 400°F (200°C) and line a muffin tin with liners.
  2. Mix the dry ingredients in a large bowl: 2 cups flour, sugar, baking powder, and salt.
  3. Combine the wet ingredients in a separate bowl: melted butter, eggs, milk, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined, then gently fold in fresh blueberries.
  5. Make the streusel by combining brown sugar, oats, 1/4 cup flour, and cinnamon. Add melted butter until crumbly.
  6. Fill each muffin cup with batter nearly to the top and sprinkle with streusel topping.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Allow to cool before serving.

Notes

For best results, use fresh blueberries. These muffins also pair well with whipped cream or yogurt.
