Delightful banana chocolate chip muffins that bring comfort and nostalgia with every bite.

Ingredients

  • 2 ripe bananas, mashed
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch of salt
  • 3/4 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a muffin tin generously.
  2. Mash the ripe bananas well and fold in the melted butter.
  3. Stir in the baking soda and a pinch of salt.
  4. Next, add the sugar, beaten egg, and vanilla extract, mixing until combined.
  5. Fold in the flour and chocolate chips until just incorporated.
  6. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  7. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the muffins to cool slightly in the tin before transferring to a wire rack.

Store in an airtight container at room temperature for up to 3 days, or freeze for up to 3 months.
