A warm and comforting banana walnut cake filled with the rustic crunch of walnuts and the sweetness of ripe bananas.

  • 3 ripe bananas, mashed
  • 1/2 cup unsalted butter, softened
  • 1 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup walnuts, chopped
  • Cream cheese frosting (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. Mix in the mashed bananas until well combined.
  5. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  6. Gradually add the dry ingredients to the banana mixture, mixing until just combined.
  7. Stir in the chopped walnuts.
  8. Pour the batter into the prepared cake pan and smooth the top.
  9. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  10. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  11. If desired, frost with cream cheese frosting before serving.

Choose ripe bananas for the best flavor and ensure not to overmix when combining wet and dry ingredients.
