Ingredients

  • 1 lb ground beef
  • 1 cup shredded cheese
  • 4 large flour tortillas
  • 1 can refried beans
  • 1 onion, chopped
  • 1 tsp garlic powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. In a skillet, cook the ground beef and chopped onion over medium heat until the beef is browned and the onion is soft, about 5-7 minutes. Drain excess fat.
  2. Stir in garlic powder, cumin, salt, and pepper, cooking for another 2-3 minutes.
  3. Spread refried beans on each tortilla, add the beef mixture, and sprinkle cheese on top.
  4. Roll the tortillas tightly and secure with toothpicks if necessary.
  5. Heat oil in a deep skillet and fry chimichangas until golden brown, about 3-4 minutes.
  6. Remove from oil and drain on paper towels; serve hot.
