  • 1/2 cup melted butter
  • 2 cups cream cheese
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup chopped pistachios
  • 1/2 teaspoon ground cinnamon
  • 1 cup honey
  • 1/2 cup water

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Combine the crushed graham crackers and melted butter in a bowl. Mix until combined, then press firmly into the bottom of a springform pan.
  3. Beat the cream cheese, granulated sugar, and vanilla extract together in a large mixing bowl until creamy and smooth.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Fold in the chopped pistachios and ground cinnamon.
  6. Pour the cheesecake batter over the graham cracker crust, spreading it evenly.
  7. Bake for 50-60 minutes until the edges are set and the center has a slight jiggle.
  8. Simmer the honey and water in a small saucepan for about 10 minutes until slightly thickened.
  9. Cool the cheesecake completely at room temperature, then drizzle with warm honey syrup before serving.

Notes
