Soft, moist blueberry muffins that are bursting with juicy blueberries, perfect for breakfast or an afternoon snack.

Ingredients

  • 1 cup fresh or frozen blueberries
  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 1/3 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners.
  2. In a mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, baking soda, and salt.
  3. Whisk together the milk, vegetable oil, egg, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and gently stir until just combined.
  5. Fold in the blueberries gently.
  6. Pour the muffin batter into the prepared muffin tin, filling each cup about 2/3 full.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Let cool for a few minutes before transferring to a wire rack.

Notes

For perfectly domed muffins, fill the cups to the brim. Use muffin liners for easy cleanup.
