A delightful dish combining succulent chicken breasts with a sweet blueberry and fragrant thyme sauce, perfect for weeknight dinners or special occasions.

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh blueberries
  • 2 tablespoons fresh thyme leaves
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 tablespoon honey
  • 1 tablespoon balsamic vinegar

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken breasts generously with salt and pepper on both sides.
  3. Sear the chicken in a skillet with olive oil over medium heat for about 4-5 minutes on each side, until golden brown.
  4. Prepare a mixing bowl and combine fresh blueberries, thyme leaves, honey, and balsamic vinegar.
  5. Combine the seared chicken in a baking dish and pour the blueberry mixture over the top.
  6. Bake for 25-30 minutes or until the chicken reaches an internal temperature of 165°F (74°C).
  7. Serve hot, garnished with additional fresh thyme if desired.

Notes

Leftovers can be stored in an airtight container for up to 3 days. If too sweet, balance with a squeeze of lemon juice.
