Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract

Instructions

  1. Whisk together dry ingredients in a large bowl until well combined.
  2. Mix wet ingredients in another bowl until fully blended.
  3. Combine the wet and dry ingredients together gently until just combined.
  4. Heat a non-stick skillet over medium heat, adding butter or oil if desired.
  5. Cook 1/4 cup of batter for each pancake, flipping when bubbles form.
  6. Serve warm with your favorite toppings.

Notes

For a healthier version, substitute half of the all-purpose flour with whole wheat flour.
