A bright and delicious tart combining the tanginess of fresh lemon juice and the sweetness of juicy blueberries, perfect for summer gatherings or a delightful afternoon treat.

Ingredients

  • 1 pre-made tart crust
  • 1 cup fresh blueberries
  • 1 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 3 large eggs
  • 1/2 cup fresh lemon juice
  • Zest of 1 lemon
  • 1/4 teaspoon salt
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together the sugar, flour, and salt.
  3. Add the eggs, lemon juice, and lemon zest to the bowl and mix until smooth.
  4. Pour the filling into the tart crust.
  5. Sprinkle the fresh blueberries evenly on top of the filling.
  6. Bake for 30-35 minutes or until the filling is set and slightly golden.
  7. Allow the tart to cool completely before dusting with powdered sugar.
  8. Slice and serve chilled.
