A delightful summer appetizer combining fresh peaches and creamy whipped ricotta, perfect for gatherings or a leisurely snack.

  • 6 slices of baguette or Italian bread
  • 2 ripe peaches, diced
  • 1 cup ricotta cheese
  • 2 tablespoons honey
  • 1 tablespoon fresh lemon juice
  • Salt and pepper to taste
  • Fresh basil leaves, chopped
  • Balsamic glaze (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place the slices of bread on a baking sheet and toast them in the oven for about 5-7 minutes or until golden brown.
  3. In a bowl, mix the ricotta cheese, honey, lemon juice, salt, and pepper until smooth.
  4. Spread the whipped ricotta mixture generously over the toasted baguette slices.
  5. Top each slice with diced peaches and a sprinkle of chopped basil.
  6. Finish it off with a drizzle of balsamic glaze if desired before serving.

Notes
