A delicious coffee cake featuring a soft texture and a sweet, crumbly streusel topping, perfect for morning coffee or an afternoon treat.

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1/2 cup sour cream
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup brown sugar, packed
  • 1 tablespoon ground cinnamon
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the sour cream and vanilla extract.
  4. In another bowl, combine the flour, baking powder, baking soda, and salt. Gradually add this dry mixture to the creamed mixture.
  5. In a separate bowl, mix the brown sugar, cinnamon, and nuts for the streusel topping.
  6. Spread half of the batter in the prepared pan and sprinkle with half of the streusel mixture. Add the remaining batter and spread it evenly.
  7. Finish by sprinkling the rest of the streusel on top.
  8. Bake for 30-35 minutes or until a toothpick inserted comes out clean.
  9. Allow the cake to cool slightly before serving.

Notes

Serve warm with whipped cream or ice cream. Can store leftovers at room temperature for up to 3 days.
