A vibrant celebration of flavors, this Tuscan Chicken Pasta combines tender chicken, sautéed garlic, and fresh cherry tomatoes in a creamy pasta dish.

Ingredients

  • 8 ounces of penne pasta
  • 1 pound of chicken breast, diced
  • 2 tablespoons of olive oil
  • 3 cloves of garlic, minced
  • 1 cup of cherry tomatoes, halved
  • 1 cup of spinach
  • 1 cup of heavy cream
  • 1/2 cup of grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Cook the penne pasta according to package instructions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add the diced chicken and season with salt and pepper. Cook until browned and cooked through.
  3. Add minced garlic to the skillet and cook for an additional minute until fragrant.
  4. Stir in cherry tomatoes and spinach, cooking until the spinach is wilted.
  5. Pour in the heavy cream and bring to a simmer. Stir in grated Parmesan cheese until melted and smooth.
  6. Combine the cooked pasta with the sauce, mixing well. Cook for a few more minutes to heat through.
  7. Serve hot, garnished with fresh basil.

Notes

For a healthier version, swap the heavy cream for Greek yogurt or cashew cream. Feel free to add other vegetables like bell peppers or asparagus.
