A deliciously easy Caprese Quick Bread infused with flavors of cherry tomatoes, mozzarella, and basil, perfect for any meal.

Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup cherry tomatoes, halved
  • 1 cup fresh mozzarella, diced
  • 1/4 cup fresh basil, chopped
  • 3 large eggs
  • 1/2 cup milk
  • 1/4 cup olive oil

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. Whisk together the flour, baking powder, salt, and black pepper.
  3. Fold in the halved cherry tomatoes, diced mozzarella, and chopped basil.
  4. Mix together the eggs, milk, and olive oil in another bowl.
  5. Pour the wet ingredients into the dry ingredients and stir until just combined.
  6. Pour the batter into your prepared loaf pan and smooth the top.
  7. Bake for 50-60 minutes, or until a toothpick comes out clean.
  8. Let the bread cool in the pan for a few minutes before transferring it to a wire rack.

Notes

Serve with olive oil for dipping or alongside a light salad.
