Delicious carrot cake cookies with a rich cream cheese frosting, inspired by traditional carrot cake flavors.

  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup grated carrots
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1/2 cup raisins (optional)
  • 1 cup cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together the flour, baking soda, baking powder, salt, and ground cinnamon.
  3. Cream the softened butter, brown sugar, and granulated sugar until smooth.
  4. Beat in the egg and vanilla extract until thoroughly combined.
  5. <liGradually add the dry ingredients to the wet ingredients and mix until just combined.

  6. Fold in grated carrots, walnuts, and raisins (if using).
  7. Drop tablespoon-sized scoops of dough onto the prepared baking sheet, spacing them two inches apart.
  8. Bake for 10-12 minutes or until the edges are lightly golden.
  9. While the cookies cool, mix the cream cheese, powdered sugar, and vanilla extract until smooth.
  10. Once the cookies have cooled, spread the frosting on top and enjoy!

Notes

Store cookies in an airtight container at room temperature for up to 5 days or freeze unfrosted cookies for up to three months.
