A comforting dish of tender chicken, creamy sauce, and perfectly cooked penne pasta, inspired by the Cheesecake Factory’s Louisiana Chicken Pasta.

  • 2 boneless chicken breasts
  • 1 cup penne pasta
  • 1 cup heavy cream
  • 1 cup diced tomatoes
  • 1/2 cup Parmesan cheese
  • 1 tablespoon Cajun seasoning
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Boil the Pasta: Cook the penne pasta according to package instructions; drain and set aside.
  2. Prepare the Chicken: In a skillet, heat the olive oil over medium heat. Season the chicken breasts with salt, pepper, and Cajun seasoning. Cook the chicken until golden and cooked through, about 6-7 minutes per side. Remove from skillet and slice.
  3. Sauté the Tomatoes: In the same skillet, add the diced tomatoes and cook for 2-3 minutes until they’re softened and fragrant.
  4. Create the Cream Sauce: Stir in the heavy cream and bring to a simmer. Add the Parmesan cheese and stir until melted and luscious.
  5. Combine the Flavors: Add the cooked pasta to the skillet and mix well with the creamy sauce. Adjust seasoning if necessary for that perfect balance.
  6. Final Assembly: Top the creamy pasta with the sliced chicken and garnish with chopped parsley before serving.

Notes

Serve with a crisp green salad or garlic bread. Store leftovers in an airtight container in the fridge for up to 3 days.
