Delicious Chicken Avocado Burritos bursting with flavor and freshness, perfect for a quick meal or a weekend treat.

  • 2 cooked chicken breasts, shredded
  • 2 ripe avocados, mashed
  • 1 cup cooked rice
  • 1 cup black beans, rinsed and drained
  • 1/2 cup corn (fresh or canned)
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh parsley
  • 1 lime, juiced
  • 4 large flour tortillas
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine shredded chicken, mashed avocados, cooked rice, black beans, corn, cilantro, parsley, lime juice, salt, and pepper. Mix well.
  2. Lay flour tortillas flat on a clean surface.
  3. Distribute the chicken and avocado mixture evenly among the tortillas, folding the sides over the filling, and roll up from the bottom.
  4. Heat a skillet over medium heat and place burritos seam-side down. Cook until golden brown and hot, about 2-3 minutes per side.
  5. Let the burritos rest for a minute before serving with salsa or hot sauce.

Notes

Can substitute chicken with grilled veggies or mushrooms for a vegetarian option. Leftover burritos can be stored in the fridge for up to 2 days.
