Ingredients

  • 8 oz pasta (penne or farfalle)
  • 1 lb chicken breast, cut into bite-sized pieces
  • 2 cups cherry tomatoes, halved
  • 1 cup feta cheese, crumbled
  • 1/2 cup olives, sliced (Kalamata or green)
  • 2 cloves garlic, minced
  • 3 tbsp olive oil
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. Sauté the chicken in olive oil over medium heat, seasoning with salt, pepper, and oregano for about 7-8 minutes.
  3. Add minced garlic and halved cherry tomatoes, cooking for another 2-3 minutes until the tomatoes soften.
  4. Combine the cooked pasta, crumbled feta cheese, and sliced olives, tossing everything together.
  5. Garnish with fresh parsley and serve warm.

Notes

Consider adding sautéed spinach or arugula for extra greens, or substitute chicken with shrimp for a variation.
