A delicious Mediterranean pasta dish made with chicken, feta, and fresh vegetables, perfect for busy weeknights.

Ingredients

  • 2 cups penne pasta
  • 1 pound chicken breast, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup feta cheese, crumbled
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/4 cup red onion, diced
  • 3 cloves garlic, minced
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook the penne pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add diced chicken and cook until golden brown and cooked through, about 5-7 minutes.
  3. Add minced garlic and diced red onion to the skillet with the chicken, and sauté for another 2 minutes until fragrant.
  4. Stir in cherry tomatoes, Kalamata olives, and cooked pasta. Mix well.
  5. Add crumbled feta cheese, lemon juice, dried oregano, salt, and pepper. Toss everything together gently to combine.
  6. Cook for an additional 2-3 minutes, allowing the flavors to meld together.
  7. Serve warm, garnished with fresh parsley.

Notes

Use fresh ingredients for the best flavor. For a vegetarian version, substitute chickpeas for the chicken.
