A simple and tasty meal featuring chicken, cheese, and fresh vegetables wrapped in a crispy tortilla.

Ingredients

  • 2 tortillas
  • 1 cup cooked chicken, shredded
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1/2 cup bell peppers, sliced
  • 1/4 cup onions, sliced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Sour cream and salsa for serving

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add onions and bell peppers, cooking until soft.
  3. Layer one tortilla in the skillet.
  4. Add shredded chicken, sautéed vegetables, and cheese on one half of the tortilla.
  5. Fold the tortilla over to cover the filling.
  6. Cook until the bottom is golden and the cheese is melted, about 3-4 minutes.
  7. Flip and cook the other side until golden.
  8. Remove from heat, slice, and serve with sour cream and salsa.

Notes

Use a non-stick skillet for easier flipping. Experiment with different cheeses for varied flavors.
