A vibrant Chicken Salad Bowl with tender, shredded chicken, fresh veggies, and a tangy balsamic dressing.

Ingredients

  • 2 cups cooked chicken, shredded
  • 4 cups mixed greens (lettuce, spinach, kale)
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olives, sliced (optional)
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, red onion, and olives if using.
  2. Add the shredded chicken on top of the salad.
  3. In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
  4. Drizzle the dressing over the salad and toss gently to combine.
  5. Top the salad with crumbled feta cheese. Serve immediately.
