Delicious and nutritious chickpea brownies that are flourless and packed with rich chocolate flavor.

Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1/2 cup cocoa powder
  • 1/2 cup maple syrup
  • 1/4 cup natural peanut butter or almond butter
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup dark chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking dish.
  2. In a food processor, combine the chickpeas, cocoa powder, maple syrup, peanut butter, vanilla extract, baking powder, and salt. Blend until smooth.
  3. Stir in the chocolate chips if desired.
  4. Pour the batter into the prepared baking dish and spread it evenly.
  5. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  6. Allow to cool before cutting into squares.

Notes

Store leftovers in an airtight container at room temperature for up to 3 days, or in the refrigerator for a week. Freeze for longer storage.
