A comforting dish featuring sweet, spicy chicken thighs paired with creamy smoked Gouda mashed potatoes.

  • 4 chicken thighs
  • 2 tablespoons chipotle sauce
  • 2 tablespoons honey
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 2 cups potatoes, peeled and cubed
  • 1/2 cup smoked Gouda cheese, grated
  • 1/4 cup milk
  • 2 tablespoons butter

Instructions

  1. Preheat the oven to 400°F (200°C) to get it nice and hot, perfect for roasting the chicken to golden perfection.
  2. Whisk the marinade: In a bowl, combine the chipotle sauce, honey, olive oil, salt, and pepper.
  3. Coat the chicken: Take each chicken thigh and coat it generously in your flavorful marinade. Place them on a baking sheet.
  4. Bake the chicken: Pop the baking sheet in the preheated oven and bake for 25-30 minutes or until the chicken is fully cooked.
  5. Boil the potatoes: Bring a pot of salted water to a boil and add the peeled, cubed potatoes. Cook until tender, about 15 minutes.
  6. Mash the potatoes: Drain the potatoes and return them to the pot. Mash them, then stir in the smoked Gouda, milk, and butter until creamy.
  7. Serve & Enjoy: Serve the chicken thighs over a generous portion of creamy mashed potatoes.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat in the oven for best texture.
