  • 4 chicken thighs
  • 2 tablespoons chipotle in adobo sauce
  • 2 tablespoons honey
  • Salt and pepper to taste
  • 2 pounds potatoes, peeled and cubed
  • 1/2 cup smoked gouda, shredded
  • 1/4 cup milk
  • 2 tablespoons butter

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix together the chipotle in adobo sauce, honey, salt, and pepper.
  3. Coat the chicken thighs with the marinade, ensuring they are fully covered.
  4. Place the marinated chicken thighs on a baking sheet and roast in the oven for 25-30 minutes or until cooked through and golden brown.
  5. Meanwhile, bring a large pot of salted water to a boil and add the peeled and cubed potatoes.
  6. Drain the potatoes and return them to the pot. Add in the smoked gouda, milk, and butter.
  7. Serve the beautifully baked chicken thighs with a generous scoop of smoked gouda mashed potatoes on the side.

Notes

For extra flavor, marinate the chicken thighs a few hours in advance or even overnight. A splash of milk can help revive the mashed potatoes when reheating.
