A spicy yet comforting dish featuring tender chicken thighs coated in a chipotle honey glaze, served alongside creamy smoked gouda mashed potatoes.

  • 4 Chicken thighs
  • 2 tsp Chipotle chili powder
  • 1/4 cup Honey
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 cup Smoked Gouda cheese, shredded
  • 4 Potatoes, peeled and chopped
  • 2 tbsp Butter
  • 1/2 cup Milk
  • 2 cloves Garlic, minced
  • 2 tbsp Chives, chopped

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Mix together honey, chipotle chili powder, salt, and pepper until well combined.
  3. Coat the chicken thighs generously with the chipotle honey mixture.
  4. Place the chicken thighs into a baking dish.
  5. Bake the chicken for 25-30 minutes, or until cooked through and caramelized.
  6. Boil the chopped potatoes in salted water until tender, about 15-20 minutes.
  7. Mash the drained potatoes with butter, milk, smoked gouda, garlic, salt, and pepper until creamy.
  8. Serve the chicken alongside the mashed potatoes and garnish with chives.

Notes

For extra flavor, consider marinating the chicken in the honey-chipotle mixture for a few hours. Use plant-based butter and milk for a vegan version of the mashed potatoes.
