A delicious sweet and spicy dish featuring tender chicken thighs glazed with chipotle honey served alongside creamy smoked Gouda mashed potatoes.

  • 4 chicken thighs
  • 2 tablespoons chipotle sauce
  • 2 tablespoons honey
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 2 pounds potatoes, peeled and cubed
  • 1/2 cup milk
  • 1/2 cup smoked Gouda cheese, shredded
  • 2 tablespoons butter

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix chipotle sauce, honey, olive oil, salt, and pepper.
  3. Coat the chicken thighs with the mixture and place them in a baking dish.
  4. Bake for about 25-30 minutes or until the chicken is cooked through.
  5. Meanwhile, boil the potatoes in salted water until tender.
  6. Drain and mash the potatoes, then mix in milk, smoked Gouda, and butter until creamy.
  7. Serve the chicken thighs with the smoked Gouda mashed potatoes.

Notes

Adjust the spice level by adding more or less chipotle sauce according to your taste. For extra creamy mashed potatoes, add more butter or milk.
