  • 1 cup unsalted butter
  • 2 cups sugar
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup all-purpose flour
  • 1 cup cocoa powder
  • 1/2 teaspoon salt
  • 1 cup chocolate chips
  • 1/2 cup semi-sweet chocolate (for molten center)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin.
  2. Melt the butter in a saucepan over medium heat, then stir in sugar, eggs, and vanilla.
  3. Beat in flour, cocoa powder, and salt until just combined.
  4. Stir in chocolate chips.
  5. Spoon about a tablespoon of batter into each muffin cup and place a piece of semi-sweet chocolate in the center.
  6. Cover chocolate piece with more batter, filling cups to 3/4 full.
  7. Bake for 15-18 minutes until tops look set but still soft.
  8. Cool slightly before serving warm to enjoy the molten center.

Notes

For an extra flavor kick, add a teaspoon of espresso powder. Serve with vanilla ice cream or whipped cream for added enjoyment.
