Chocolate-Covered Strawberry Mini Cakes

Delightful mini cakes that are rich and moist, covered in melted chocolate and topped with fresh strawberries.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup eggs (about 2 large eggs)
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, sliced
  • 1 cup semisweet chocolate chips
  • 1 tablespoon butter

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a mini cake pan.
  2. In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the eggs, milk, vegetable oil, and vanilla extract.
  4. Gradually pour the wet ingredients into the dry ingredients, mixing until smooth.
  5. Pour the batter into the greased mini cake pan, filling each cavity about two-thirds full. Bake for 15-20 minutes.
  6. Remove the mini cakes to cool in the pan for a few minutes, then transfer them to a wire rack to cool completely.
  7. Melt the chocolate chips and butter together until smooth.
  8. Once the cakes are cool, dip each mini cake into the melted chocolate.
  9. Top each mini cake with sliced strawberries before the chocolate sets.
  10. Once the chocolate has set, serve the mini cakes and enjoy!

Notes

Ensure eggs and milk are at room temperature for better mixing. For a smooth chocolate coating, don’t overheat the chocolate.
