A rich and indulgent cake featuring velvety chocolate mousse layered over a decadent chocolate cake and fresh raspberries.

Ingredients

  • 1 cup dark chocolate chips
  • 2 cups raspberries
  • 2 cups heavy cream
  • 3/4 cup granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 chocolate cake layer (optional)
  • Fresh raspberries and chocolate shavings for garnish

Instructions

  1. Melt the dark chocolate chips in a heatproof bowl set over simmering water. Cool slightly.
  2. In a separate bowl, whip the heavy cream with the sugar until soft peaks form.
  3. Beat the eggs until thick and pale, then add vanilla and melted chocolate, stirring to combine.
  4. Fold the whipped cream and raspberries into the chocolate mixture.
  5. If using, place the chocolate cake layer in a springform pan.
  6. Pour the mousse over the cake layer and chill in the refrigerator for at least 4 hours.
  7. Garnish with fresh raspberries and chocolate shavings before serving.

Notes

For best results, use high-quality dark chocolate. It can be made a day ahead and stored in the fridge. Serve with whipped cream or ice cream.
