Chocolate Raspberry Tartlets

Delightful tartlets featuring a cocoa shell filled with rich chocolate ganache and fresh raspberries.

Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup powdered sugar
  • 1/2 cup unsalted butter, chilled and cubed
  • 1/4 teaspoon salt
  • 1 egg yolk
  • 2 tablespoons cold water
  • 1 cup dark chocolate, chopped
  • 1/2 cup heavy cream
  • 1 cup fresh raspberries
  • Mint leaves for garnish (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine flour, cocoa powder, powdered sugar, and salt.
  3. Add chilled butter into the dry mixture and mix until it resembles coarse crumbs.
  4. Mix in egg yolk and cold water until a dough forms.
  5. Roll out the dough to 1/4 inch thickness. Press into tartlet pans and prick the bottoms with a fork.
  6. Bake the shells for 15 minutes, then cool completely on a wire rack.
  7. Heat heavy cream until boiling, then add chopped chocolate, stirring until melted and smooth.
  8. Pour ganache into the cooled tartlet shells and let set for at least 30 minutes.
  9. Top each tartlet with fresh raspberries.
  10. Garnish with mint leaves if desired, and serve chilled or at room temperature.

Notes

Make sure your butter is very cold for a flaky crust. You can use different berries or flavored liqueurs for variations.
