  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup strong brewed coffee, cooled
  • 1 cup mascarpone cheese
  • 1/4 cup heavy cream
  • 1/4 cup powdered sugar
  • Cocoa powder for dusting

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with colorful liners.
  2. Whisk together the flour, cocoa powder, baking powder, baking soda, and salt in a bowl.
  3. Cream together the granulated sugar, brown sugar, and softened butter until fluffy. Add the eggs one at a time, mixing well. Stir in the vanilla extract and cooled coffee.
  4. Combine the dry mixture with the wet mixture, mixing until just combined.
  5. Fill the cupcake liners about two-thirds full with the batter. Bake for 18-20 minutes.
  6. Make the mascarpone frosting by beating together mascarpone cheese, heavy cream, and powdered sugar until soft peaks form.
  7. Frost the cooled cupcakes and dust with cocoa powder before serving.
