Delightful cinnamon roll cookies that capture the essence of traditional cinnamon rolls in a bite-sized format, perfect for sharing.

  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 tablespoon ground cinnamon
  • 1/4 cup powdered sugar (for glaze)
  • 12 tablespoons milk (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix together the flour, baking soda, and salt until well combined.
  3. Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  4. Add the egg and vanilla extract to the butter-sugar mixture, mixing until fully combined.
  5. Gradually stir in the dry ingredients until just combined, being careful not to overmix.
  6. In a small bowl, mix together the brown sugar and ground cinnamon.
  7. Roll out the cookie dough on a floured surface into a rectangle about 1/4 inch thick.
  8. Sprinkle the cinnamon-sugar mixture evenly over the rolled-out dough.
  9. Carefully roll the dough tightly into a log shape and slice it into 1-inch pieces.
  10. Place the cookie slices on the prepared baking sheet and bake for 10-12 minutes until golden and fragrant.
  11. For the glaze, whisk together powdered sugar with enough milk for desired consistency, then drizzle over cooled cookies.

Notes

Store leftovers in an airtight container for up to 3 days at room temperature or up to a week in the fridge. Freeze for longer storage.
