Delightful muffins that combine the classic flavors of French toast in a quick and easy portable form.

Ingredients

  • 6 slices of bread (preferably stale)
  • 3 large eggs
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1 tablespoon cinnamon
  • 1/2 cup sugar
  • 1/4 cup melted butter
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin.
  2. Cut the bread into small cubes and set them aside.
  3. Whisk together the eggs, milk, vanilla extract, cinnamon, sugar, melted butter, baking powder, and salt until blended.
  4. Soak the bread cubes in the egg mixture, gently stirring to combine.
  5. Spoon the mixture into the muffin tin, filling each cup about 3/4 full.
  6. Bake for 15-20 minutes, until golden brown.
  7. Cool slightly before removing from the tin and serve warm.

Notes

Use stale bread for best results and feel free to customize with mix-ins like chocolate chips or fruit.
