Ingredients

Scale
  • 2 cups warm water
  • 1 packet (2 1/4 teaspoons) active dry yeast
  • 1/4 cup granulated sugar
  • 5 cups all-purpose flour
  • 1/2 cup baking soda
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon salt
  • 1/2 cup granulated sugar (for topping)
  • 1 tablespoon ground cinnamon
  • Coarse salt for sprinkling

Instructions

  1. Activate the yeast: In a large bowl, combine warm water, yeast, and sugar. Let sit for about 5 minutes until frothy.
  2. Combine the ingredients: Add flour, melted butter, and salt to the yeast mixture. Mix until a dough forms.
  3. Knead the dough on a floured surface for about 5 minutes until smooth.
  4. Let the dough rise: Place the kneaded dough in a greased bowl, cover, and let it rise for about 60 minutes, or until doubled in size.
  5. Preheat your oven to 450°F (230°C).
  6. Prepare the boiling solution: In a large pot, boil 10 cups of water and add baking soda.
  7. Shape the pretzels: Divide the dough into small pieces, shape them into pretzels, and boil each for 30 seconds.
  8. Arrange for baking: Place pretzels on a baking sheet lined with parchment paper.
  9. Sweeten the finish: Mix sugar and cinnamon in a bowl and sprinkle on top of the pretzels.
  10. Bake the pretzels: Bake for 12-15 minutes until golden brown.
  11. Final touch: Sprinkle with coarse salt before serving.
