A comforting Italian dish with fried chicken, marinara sauce, and melted cheese served over spaghetti.

  • 2 boneless, skinless chicken breasts
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • 2 cups marinara sauce
  • 8 oz spaghetti
  • 1 cup shredded mozzarella cheese
  • Salt and pepper to taste
  • Olive oil for frying
  • Fresh basil for garnish

Instructions

  1. Cook spaghetti according to package instructions. Once cooked, drain and set aside to await its delicious topping.
  2. Preheat your oven to 375°F (190°C). We want it nice and hot to get that cheese perfectly bubbly.
  3. Prepare the breadcrumb mixture by combining breadcrumbs, grated Parmesan, salt, and pepper.
  4. Coat each chicken breast in the egg, allowing the excess to drip off, then coat thoroughly with the breadcrumb mixture.
  5. Fry the chicken in olive oil over medium heat until golden brown, about 5-7 minutes per side.
  6. Assemble the fried chicken in a baking dish, pour marinara sauce over, and sprinkle with mozzarella cheese.
  7. Bake for 20 minutes or until the cheese is bubbly and golden.
  8. Serve the cheesy chicken over cooked spaghetti and garnish with fresh basil.

Notes

For a lower-carb option, substitute spaghetti with zucchini noodles. Store leftovers in an airtight container for 3-4 days.
