Copycat Starbucks Egg Bites

Quick and easy breakfast egg bites packed with protein and veggies.

Ingredients

  • 6 large eggs
  • 1/2 cup cottage cheese
  • 1/4 cup shredded cheese (cheddar or your choice)
  • 1/2 cup spinach, chopped
  • 1/4 cup bell pepper, diced
  • Salt and pepper to taste
  • Optional: cooked bacon or sausage, diced

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a mixing bowl, whisk together the eggs and cottage cheese until well combined.
  3. Stir in the shredded cheese, chopped spinach, diced bell pepper, salt, and pepper. If using, add the cooked bacon or sausage.
  4. Pour the mixture into silicone muffin cups or greased ramekins, filling each cup about 3/4 full.
  5. Place the cups in a baking pan and fill the pan with water halfway up the sides of the cups.
  6. Bake for about 25-30 minutes or until the egg bites are set in the center.
  7. Let them cool slightly before removing from the cups and enjoy!

Notes

Serve warm with salsa or hot sauce for an extra kick. Also pairs well with toast and a fresh fruit salad.
