  • 4 large eggs
  • 1/2 cup shredded cheese (cheddar, mozzarella, or your choice)
  • 1/2 cup chopped vegetables (spinach, bell peppers, or onions)
  • Salt and pepper to taste
  • Optional: herbs (like chives or parsley)

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a muffin tin.
  2. In a bowl, whisk together the eggs and cottage cheese until well combined.
  3. Stir in the shredded cheese and chopped vegetables. Season with salt, pepper, and herbs if using.
  4. Pour the mixture evenly into the muffin tin, filling each cup about 3/4 full.
  5. Bake for 20-25 minutes, or until the egg bites are set and lightly golden.
  6. Let cool slightly before removing from the muffin tin and enjoy!
