A hearty and vibrant pasta dish with chicken and broccoli, flavored with a rich, garlicky cowboy butter sauce and brightened with lemon.

Ingredients

  • 8 oz bowtie pasta
  • 2 chicken breasts, cooked and sliced
  • 2 cups broccoli florets
  • 1/2 cup unsalted butter
  • 4 cloves garlic, minced
  • 1 lemon, zested and juiced
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving
  • Fresh parsley for garnish

Instructions

  1. Boil the pasta according to package instructions; reserve 1 cup of pasta water, then drain.
  2. Melt the butter in a large skillet over medium heat.
  3. Add the minced garlic and cook until fragrant, about 1 minute.
  4. Stir in the lemon zest, lemon juice, oregano, and red pepper flakes.
  5. Add the broccoli and sauté for 3-4 minutes until tender.
  6. Toss in the cooked chicken and drained pasta, adding pasta water as needed to create a sauce.
  7. Season with salt and pepper to taste.
  8. Serve topped with grated Parmesan cheese and fresh parsley.

Notes

For perfect pasta, salt your boiling water generously. Customize the veggies as desired.
