A comforting loaf of honey-cinnamon oatmeal bread that’s hearty and tender, perfect for breakfast or an afternoon snack.

  • 2 cups rolled oats
  • 1 cup milk
  • 1/2 cup honey
  • 1/3 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. Combine the rolled oats and milk in a bowl, letting it sit for 15 minutes.
  3. Whisk together honey, vegetable oil, eggs, and vanilla extract in another bowl.
  4. Add the soaked oat mixture to the wet ingredients and mix well.
  5. Whisk together flour, baking powder, baking soda, cinnamon, and salt in a separate bowl.
  6. Gradually add the dry ingredients to the wet mixture and stir gently until just combined.
  7. Pour the batter into the greased loaf pan.
  8. Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.
  9. Allow the bread to cool in the pan for a few minutes before transferring to a wire rack to cool completely.
